
A few days ago, I visited Santo Coyote in Guadalajara, a place I had heard a lot about, and it completely exceeded my expectations. From the moment you step in, the atmosphere envelops you: warm lights, handcrafted details, and a décor that reflects the best of Mexican culture.
It feels like entering a little oasis in the middle of the city.
What first impressed me was the space: it’s spacious, with several outdoor areas and charming corners. It feels both intimate and lively at the same time, perfect for a romantic dinner or a gathering with friends. The staff, by the way, was incredibly attentive and made excellent recommendations.
The menu is a celebration of Mexican flavors with a contemporary twist. I tried the mole, which was incredible, and my companion ordered a traditional fish dish that melted in your mouth. Everything, from appetizers to desserts, was carefully prepared. Plus, the presentation of the dishes was beautiful but unpretentious—here, the focus is on the flavor.
The night was even better thanks to the live music. The band played a repertoire that mixed classic Mexican tunes with modern songs, creating a vibrant and joyful atmosphere. Between songs, we enjoyed the cocktails, which are another highlight of the place. My favorite was one made with tequila and fresh fruits, which complemented the meal perfectly.
